A creamy, vibrant all-in-one Spring dish (no extras required!) inspired by risotto, loaded with lots of delicious vegetables (broccoli, green beans, peas, sweet corn, spinach...), fresh herbs, velvety soy cream, a touch of white wine and plenty of zesty lemons.

This gorgeous risotto-inspired dish tastes rich and creamy, and light and vibrant all at the same time – and is 100% vegan and gluten-free (*). It’s filled it to the brim with bold, cheesy flavours, while lots of Spring veggies, quinoa (a less-heavy alternative to rice) and lemon keep it tangy and bright. In other words: a meal you never want to stop eating.
There's something else that makes our Springtime Quinotto very special to us. We’re very excited to announce that this is our first complete Solid Stash meal. That’s right: no need to add a carb or side dish for this one – just thoroughly heat in the microwave et voila: dinner at home (or lunch at the office) is served!

- Preparation: heat in the microwave (not on the stovetop) and stir every 2-3 minutes until piping hot throughout.
- Pimping tips (optional):
- Drizzle with your very best extra virgin olive oil, a good grind of fresh black pepper and some sea salt flakes (like fleur de sel or Maldon sea salt)
- Sprinkle with some chopped toasted nuts like almonds or pine nuts
- Finely grate some (vegan) parmesan on top
- Add fried or poached egg for a vegetarian alternative
- If you like it spicy, why not drizzle with some sriracha chili sauce
- Top with some fresh watercress, finely sliced spring onion, (micro) herbs or finely sliced radish for an extra pop of colour
- Top with some golden, crispy fried bread crumbs for extra texture
