Schiacciata Romana is a traditional Italian flatbread. Schiacciare means “to press with the fingers” – just how the dough is shaped. Romana refers to the way it’s baked: quickly, on stone, at high heat. A touch of extra virgin olive oil and sea salt finish it off.
