A firm favourite: caramelised butternut squash, sweet apricots and raisins, a good pinch of cinnamon and soft, comforting white beans... Heaven!

Instructions for preparation:

Simply take your packet of Solid Stash from the freezer, remove from packaging and place frozen into a casserole or microwave dish. Add 1-2 tbsp water & warm on stove (medium heat) / in microwave, often stirring carefully, until piping hot throughout (10-15 min).
 

Pimping - tips for taking your Stash to the next level: 
If you have time, why not pick up one or more of these items from the shop so you are ready to pimp your meal? :)
  • a big dollop of (vegan) yogurt
  • a drizzle of your nicest olive oil
  • some nice flaky sea salt (like Maldon or fleur de sel)
  • roughly chopped fresh coriander
  • toasted pumpkin seeds
  • If you really want to go for it you could bejewel your couscous with beautiful little textures and colours like pomegranate seeds, roughly chopped pistachios, more fresh coriander or mint, etc.

 

How to store your Solid Stash:

Please make sure your Solid Stash goes straight into the freezer without delay after delivery/collection, and that it is stored at maximum -18° C at all times. If you are transporting your Stash, please ensure it remains frozen and at a steady temperature during transport (which should be as short as possible), and utilise appropriate cooling kit for this. Once defrosted eat within 24 hours and do not refreeze. Consume within 6 months after preparation date.

Butternut squash, tomatoes (citric acid E330), freshly cooked white beans, onions, green olives, raisins & dried apricots (E220 sulphite), olive oil, fresh coriander, vegetable stock (carrot, onion, leek, salt, yeast extract, sugar, mushroom, xanthan gum, carob kernel flour, aromas, bay leaf), cinnamon, dried chilli, salt, sugar, pepper.

 

*Bonus* The background story:

I've been making and tweaking versions of this recipe (originally by my first love: Mr Jamie Oliver) for years, and I always happily welcome it back into the repertoire after forgetting about it for a couple of months.

For me beans are a hug in a bowl, and this dish has got everything you could possibly want from comfort food. It's warm with spices, savoury with olives and caramelised, vibrant-orange butternut squash - and plump dried apricots and raisins bring just the right amount of sweetness to balance things out.

The fact that it's special enough to serve to guests is a welcome bonus.
