Corn ribs: even Ottolenghi loves them.

And indeed, it is quite a brilliant invention: juicy, sweet corn cobs are quartered lengthwise, which not only ensures that the "ribs" playfully curl up a bit during preparation, but also that *whatever* marinade you apply to them, it can really lodge itself in between those juice corn kernels for a maximum flavour explosion.

In other words: a super fun, delicious and colourful eating experience (and also: very simple and quick to prepare), with a whole arsenal of possible pimping options.

Did anyone say "perfect as a snack with aperitif and ideal for the BBQ"? That's what we thought as well!

Cooking instructions
  1. Prepare: Drizzle your frozen corn ribs with some oil and sprinkle with salt and your favourite flavourings.
  2. Cook using one of these three methods:

a. In the oven: Place on a baking sheet in a single layer. Bake in a preheated oven at 180°C for 12-16 minutes or until golden and crispy, turning once.

b. On the BBQ: Grill the corn ribs on a medium heat until cooked through.

c. In the airfryer: Fry for approx. 10-14 minutes in a preheated airfryer at 200°C. Shake the product halfway through the cooking time.

Pimping tips
  • Spices are your
    friend: drizzle some oil over your frozen corn ribs and then sprinkle them with
    salt and your favourite flavourings: chicken or satay spices, Mexican spices (give
    chipotle a go!), Middle Eastern flavours, smoked paprika... Anything goes, so feel
    free to experiment!
  • Serve with some lime
    wedges or a simple dip or guacamole.
  • Sprinkle some coarsely
    chopped, fresh green herbs (coriander, chives, parsley...) over your corn ribs
    before serving for an extra colour contrast
